Marinade and Sauce
Method
Preparation and Cooking
- 1
Prepare the Marinade
In a blender, combine the garlic, fresh orange juice, lime juice, olive oil, cilantro, chipotle peppers, honey, salt, and black pepper. Blend until smooth.
- 2
Marinate the Pork Loin
Place the pork loin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
- 3
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 4
Bake the Pork Loin
Remove the pork loin from the marinade (reserve the marinade) and place it in a roasting pan. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
- 5
Prepare the Sauce
While the pork is baking, pour the reserved marinade into a saucepan and bring to a boil. Reduce heat and simmer for about 10 minutes until it thickens slightly.
- 6
Finish the Pork
Once the pork loin is done baking, remove it from the oven and let it rest for 10 minutes. Slice the pork and drizzle with the thickened sauce.
- 7
Garnish
Chop the green onions and sprinkle them over the sliced pork loin before serving.
