Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle the active dry yeast (2 tbsp) on top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Make Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Pour in the yeast mixture and melted unsalted butter (4 tbsp). Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Bathing

  1. 4

    Shape Pretzels

Preheat your oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and shape it into a pretzel.

  2. 5

    Prepare Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and add baking soda (2 tbsp). Stir until dissolved.

  3. 6

    Boil Pretzels

Carefully place each pretzel in the boiling baking soda bath for about 30 seconds on each side. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Baking

  1. 7

    Bake Pretzels

Brush each pretzel with melted butter (4 tbsp) and sprinkle with coarse sea salt (1 tbsp). Bake in the preheated oven for 12-15 minutes or until golden brown.

  2. 8

    Cool and Serve

Remove from the oven and let cool on a wire rack. Serve warm with mustard or cheese sauce.
