1. Chill glass
Place a chilled coupe or Nick & Nora glass in the freezer or fill with ice and water to chill while you prepare the cocktail.
2. In a mixing glass, add Gray Whale Gin (1.25 oz), Carpano Bianco Vermouth (1.0 oz), and Luxardo Bitter Bianco (0.75 oz).
3. Add fresh lemon juice (0.25 oz) to brighten the drink and 2 dashes of orange bitters.
4. Fill the mixing glass with 6 large ice cubes. Stir briskly for 20–30 seconds (about 30–40 revolutions) until the mixture is well chilled, slightly diluted, and the mixing glass is cold to the touch.
5. Discard the ice/water from the chilled serving glass if used. Strain the cocktail through a julep or fine strainer into the chilled coupe or Nick & Nora glass.
Garnish & Finish
6. Express the oils of a lemon twist over the surface of the cocktail by holding the twist skin-side down over the drink and giving it a quick squeeze. Run the twist around the rim and drop it into the glass.
7. Optional: lightly slap a small sprig of thyme or rosemary between your palms to release aromatics and rest it on the surface as a fragrant garnish (do not ignite).
8. Serve immediately.
