Almond-Graham Cracker Crust

    Prep and combine crumbs

    Preheat oven to 350°F (175°C). In a medium bowl, combine 1.5 cups graham cracker crumbs, 1/2 cup finely ground blanched almonds, 2 tablespoons granulated sugar, and 1/4 teaspoon fine sea salt. Stir to distribute evenly.

    Add butter and press

    Pour 6 tablespoons melted butter over the dry mixture and mix until evenly moistened — texture should hold when squeezed. Press mixture firmly and evenly into the bottom and about 1/2 inch up the sides of a 9-inch (23 cm) springform pan or pie dish, using the bottom of a measuring cup for an even layer.

    Bake and cool

    Bake crust 10 to 12 minutes, or until set and slightly golden. Remove from oven and let cool completely on a rack while you prepare the next layers. Reduce oven temperature to 325°F (160°C) if you plan to gently warm the curd later (optional).

Key Lime Curd Layer (middle custard)

    Whisk eggs and sugar

    In a medium heatproof bowl, whisk together 4 egg yolks, 2 whole eggs, and 1 cup granulated sugar until smooth and slightly pale.

    Temper with lime juice

    Gradually whisk in 1 cup fresh key lime juice and 2 tablespoons key lime zest until incorporated.

    Cook the curd

    Place the bowl over a simmering water bath (double boiler) — water should not touch the bowl. Stir continuously with a spatula or whisk and cook until mixture thickens and registers 170–175°F (77–80°C) on an instant-read thermometer, about 8–12 minutes. It should coat the back of a spoon.

    Finish with butter and strain

    Remove from heat. Immediately whisk in 8 tablespoons chilled cubed butter, one or two cubes at a time, until emulsified and smooth. Stir in 1/4 teaspoon fine sea salt. For extra silkiness, strain the curd through a fine-mesh sieve into a clean bowl to remove any cooked egg bits and lime zest if you prefer a smoother texture.

    Chill the curd layer

    Pour the curd into the cooled crust and smooth the top. Cover with plastic wrap directly on the surface to prevent a skin forming and chill in the refrigerator for at least 2 hours, or until firmly set (overnight is fine).

Key Lime Mousse (top layer)

    Bloom gelatin

    Sprinkle 1 teaspoon unflavored gelatin over 2 tablespoons cold water in a small bowl. Let stand 5 minutes to bloom.

    Dissolve gelatin

    Gently warm the bloomed gelatin in the microwave for 8–10 seconds or over a double boiler just until liquefied. Do not boil. Let cool slightly but remain pourable.

    Beat cream cheese

    In a mixing bowl, beat 6 ounces softened cream cheese with 2 tablespoons powdered sugar, 2 tablespoons key lime juice, and 1 teaspoon key lime zest until very smooth and lump-free.

    Whip cream for mousse base

    In a chilled bowl, whip 1.5 cups cold heavy cream with 3 tablespoons powdered sugar to soft-medium peaks.

    Combine and set

    Fold one-third of the whipped cream into the cream cheese mixture to lighten it, then fold in the remaining whipped cream gently to keep air. Stir in the dissolved gelatin quickly and evenly so it distributes without deflating the mousse. Taste and adjust lime if needed. Spread the mousse over the set curd layer and smooth the top. Refrigerate for at least 2 hours to set (longer for firmer texture).

Fresh Whipped Cream & Garnish

    Make whipped cream

    About 15–20 minutes before serving (or after mousse is set), whip 1 cup cold heavy cream with 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract to medium-stiff peaks.

    Assemble topping

    Pipe or spread the whipped cream over the chilled mousse layer in decorative swirls or an even layer. Scatter 2 tablespoons lime 'caviar' (finger lime pearls) across the top; if unavailable, evenly sprinkle additional key lime zest. Finish with 2 tablespoons toasted almond slices for crunch, if desired.

    Chill and serve

    Chill the finished pie for another 30 minutes to let flavors marry. To serve, run a thin knife around the edge of the pan, release the springform (if used), slice with a hot, clean knife for neat slices, and garnish each slice with extra lime pearls or zest. Keeps well refrigerated for up to 3 days.
