Honey-olive oil drizzle
Vanilla sweet whipped cream
Finishes & optional
Method
Berries
- 1
Prepare berries
Gently rinse all berries in a colander under cold water and drain thoroughly. Pat dry with paper towels. Hull and halve strawberries if they are large so pieces are bite-sized. Place strawberries, blueberries, raspberries, and blackberries together in a medium mixing bowl.
Honey-olive oil drizzle
- 2
Make drizzle
In a small bowl or jar, combine 2 tablespoons acacia honey, 1 tablespoon mild extra-virgin olive oil, 1 teaspoon fresh lemon juice, 1 teaspoon freshly grated or crushed grains of paradise, and a pinch of fine sea salt. Whisk or shake until homogenous. Taste and adjust: add another small pinch of salt or a tad more lemon if it needs brightness. Set aside.
- 3
Pour about two-thirds of the drizzle over the berries and gently toss with a rubber spatula or wooden spoon until berries are evenly coated. Reserve remaining drizzle to finish the plated dish right before serving.
Vanilla sweet whipped cream
- 4
Whip cream
Chill a small bowl and beaters (optional) in the fridge for 10 minutes. Pour 3 tablespoons cold heavy cream into the bowl. Add 1 teaspoon powdered sugar, 1 teaspoon vanilla bean paste or extract, and a pinch of salt. Whip with a hand mixer or whisk until soft peaks form — the cream should hold shape but still be dollop-able (about 1–2 minutes with a mixer). Taste and add a touch more sugar if you prefer sweeter cream.
- 5
Transfer whipped cream to a small piping bag or refrigerate until ready to serve.
Finish & serve
- 6
Divide the tossed berries among 4 small dessert bowls or plates (serving suggestion below). Spoon or pipe a generous dollop (about 3/4 tablespoon) of the vanilla sweet whipped cream alongside or atop the berries.

Garnish each serving with torn mint leaves, a sprinkle of toasted nuts if using, and a little lemon zest if desired. Serve immediately so berries retain their texture.
