Horseradish Crème Fraîche

    Make crème fraîche base

    In a medium bowl, add 1 cup of crème fraîche. Stir gently to loosen until smooth and slightly airy.

    Grate fresh horseradish finely (measure about 2 tablespoons packed). If horseradish is very pungent, start with 1 tablespoon and taste; you can add more.

    Fold the grated horseradish into the crème fraîche until evenly distributed.

    Add 1 teaspoon lemon juice, 1 teaspoon fine sea salt, and 1 teaspoon freshly ground white pepper. Stir and taste. Adjust salt, lemon, or horseradish to achieve a bright, slightly piquant flavor that complements — not overpowers — the caviar.

    Cover and chill for at least 30 minutes (preferably 1 hour) to allow flavors to marry. Keep chilled until ready to serve.

Accompaniments (optional)

    If using blinis: warm blinis gently in a skillet over low heat for 30–60 seconds per side or in a 300°F/150°C oven for 3–5 minutes. If using toast points: lightly butter and toast until just crisp.

    Spread a thin layer of softened unsalted butter on each blini/toast if desired. Keep warm or at room temperature until plating.

    Finely slice chives and set aside for garnish.

Caviar & Assembly

    Bring chilled crème fraîche mixture out of the refrigerator. Give it a gentle stir to recombine if any separation occurred.

    For service portions: decide whether serving 2 pieces or 4 pieces per plate. The provided ingredient list includes both 2 pcs and 4 pcs options — choose one based on guest count or portion size. If serving 2 pcs per plate, reserve larger spoonfuls of crème fraîche; for 4 pcs, make smaller dollops.

    Using a chilled mother-of-pearl or metal spoon (to avoid flavor transfer), place a small quenelle or rounded teaspoon (about 1/2 to 1 teaspoon for 4-piece portions, or 1 to 1 1/2 teaspoons for 2-piece portions) of horseradish crème fraîche onto each blini or toast point (or directly on chilled serving spoons if presenting caviar on spoons).

    Carefully spoon Siberian Osetra caviar on top of each crème fraîche dollop. For 2-piece presentation, place approximately 15–20 grams caviar per piece; for 4-piece presentation, place approximately 8–10 grams per piece. Use the back of the spoon to lift rather than scrape from the tin to preserve pearls.

    Handle gold leaf carefully with tweezers or a dry brush. Gently lay a small fragment of gold leaf over each caviar-topped dollop for an elegant finish (optional). Avoid touching the caviar directly with fingers.

    Garnish each piece with a few slivers of finely sliced chive, if desired. Serve immediately on chilled plates. Provide mother-of-pearl spoons, chilled blinis, or toast points and chilled glasses of vodka or Champagne as traditional accompaniments.
