Lobster (butter-poached)

Prepare lobster
If using live lobster, bring a large pot of salted water to a rolling boil. Add lobster and boil for 6–8 minutes for 1.25 lb total weight (until shells are bright red and meat is firm). Remove and immediately plunge into an ice bath to stop cooking. Crack shells, remove tails and claws, and pick meat out in large chunks. If using pre-cooked lobster, proceed to chopping into large bite-sized pieces.

Clarify butter bath
In a medium saucepan set over low heat, combine 6 tbsp unsalted butter and 1 cup water with 1 tsp kosher salt. Gently melt until butter is fully liquid and heated through; keep at a bare simmer but do not boil. This creates a gentle poaching medium. Maintain temperature around 160–175°F (71–79°C) if you have an instant-read thermometer.

Butter-poach the lobster
Add the large chunks of lobster meat to the warm butter-and-water bath and poach gently for 2–3 minutes—just until the lobster is heated through and opaque. Do not overcook. Using a slotted spoon, transfer lobster to a bowl and reserve 1–2 tbsp of the poaching liquid (butter) to fold into the salad for richness.

Season lobster
While still warm, season lobster with 2 tsp fresh lemon juice, 0.5 tsp freshly ground black pepper, and 2 tbsp finely chopped chives. Toss gently to coat.

Make the dressing: In a small bowl combine 3 tbsp mayonnaise, 0.5 tsp Dijon mustard, 2 tbsp very finely diced celery, 0.5 tsp lemon zest, 0.5 tsp sea salt, and 0.25 tsp freshly ground black pepper. Stir until smooth. Taste and adjust seasoning; the dressing should be bright but restrained—New England-style lobster rolls highlight the lobster, not heavy sauce.

Combine lobster and dressing: Fold the warm lobster and reserved 1–2 tbsp poaching butter into the dressing gently. Use only enough dressing to lightly coat the meat (about 3–4 tbsp total mixture); the lobster should read as lobster-first with a silky finish. If you prefer a chilled lobster roll, refrigerate the dressed lobster for 15–20 minutes, then re-toss gently before assembling.

Prepare rolls: Heat a large skillet or griddle over medium heat. Spread 2 tbsp unsalted butter evenly on the outer cut sides of the 4 split-top rolls.

Optional lettuce bed: If using shredded iceberg lettuce, place a small handful into each warmed roll to provide a slight crunch and barrier to sogginess.
