Whisk egg yolks with remaining sugar and the salt in a bowl until pale. Slowly ladle about 1 cup of the hot milk mixture into the yolks while whisking constantly to temper. Then pour the yolk mixture back into the saucepan with the remaining milk mixture.

Cook the custard over medium-low heat, stirring constantly with a wooden spoon or spatula and scraping the bottom, until it thickens enough to coat the back of a spoon (temperature ~170–175°F / 77–80°C). Remove from heat, strain through a fine sieve into a bowl to remove the vanilla pod and any curdled bits.

Stir in the remaining 1 cup heavy cream. Chill the custard thoroughly: set the bowl in an ice bath and cool, then cover and refrigerate until very cold (at least 4 hours or overnight) to ensure a smooth churn.

Churn the cold custard in an ice cream maker according to manufacturer instructions until it reaches a soft-serve consistency. Gently fold in the crushed chocolate sandwich cookies, reserving about 1/2 cup for layering and garnish.

Add the reserved 1/2 cup cookie crumbs in a thin layer, then top with remaining gelato, smooth, cover with plastic wrap, and freeze until fully set (at least 6 hours or overnight).

Layer into pan and freeze

Chop the bittersweet chocolate and place in a heatproof bowl. In a small saucepan, warm 1/2 cup heavy cream with the butter, corn syrup and a pinch of salt until it just begins to simmer. Pour the hot cream mixture over the chopped chocolate and let sit one minute to soften, then whisk until smooth and glossy. Stir in vanilla extract. Cool to thick but pourable temperature; the sauce will thicken as it cools. Refrigerate if you need it to thicken faster, stirring occasionally.

In a chilled bowl, whip the softened cream cheese with the powdered sugar, vanilla extract and salt until smooth and slightly aerated.

Prepare cream cheese base

In a separate chilled bowl, whip 1.5 cups heavy cream to soft-medium peaks. Fold the whipped cream gently into the sweetened cream cheese until homogeneous and spreadable. Chill briefly if needed to firm slightly before frosting the frozen cake (about 15–20 minutes).

Whip cream

When the gelato cake is fully frozen, remove from freezer. Use the plastic wrap overhang to lift the cake from the pan. Peel away the wrap carefully. If the cake is difficult to unmold, run a warm towel quickly around the outside of the pan to loosen the edges, then lift.

Unmold

Place the frozen cake on a chilled serving plate or board. Spoon the cooled but pourable chocolate sauce over the top, letting some drip down the sides. Return the cake to the freezer for 10–15 minutes so the sauce firms slightly.

Apply chocolate sauce

Pipe or spread the whipped frosting over the top and sides as desired. Work quickly — the cake must remain frozen. If frosting becomes too soft, chill briefly and continue.

Frost

Sprinkle the reserved additional cookie crumbs over the top and along the base. Optionally pipe small rosettes and drizzle extra chocolate sauce for decoration. Keep the completed cake frozen until ready to slice.

Garnish & finish

Slice with a hot, dry knife (dip in hot water and wipe dry between slices) to get clean cuts. Serve immediately; leftovers should be kept in an airtight container in the freezer.
