    Pre-chill glass

    Place an old fashioned glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to cool the glass; discard water just before pouring.

    Combine ingredients

    In a mixing glass or stirring vessel, add 2 oz El Tesoro Single Barrel Reposado, 0.25 oz agave syrup, 3 dashes grapefruit bitters, and 1 dash aromatic bitters (if using).

    Stir and chill

    Fill the mixing glass with plenty of ice and stir gently for 20–30 seconds (about 20–30 good turns) until the mixture is well chilled and slightly diluted. The goal is a silky, integrated texture, not over-dilution.

    Prepare garnish and glass

    Place a single large ice cube (or 2–3 large cubes) into the chilled old fashioned glass. Take the grapefruit peel and hold it skin-side down over the glass; give it a firm twist to express the citrus oils across the surface of the drink, then rub the peel around the rim and drop it into the glass. If using the orange peel, give it a light twist and discard or float as desired.

    Strain and serve

    Double-strain or fine-strain the stirred cocktail from the mixing glass into the prepared old fashioned glass over the large ice cube. Give the finished drink one gentle stir in the serving glass to integrate the expressed oils.

    Final aroma

    Optionally add one additional small spray of grapefruit peel oils over the surface just before serving and present immediately.
