Chardonnay Base

    Place 1.5 cups of chilled dry Chardonnay in a large pitcher or mixing vessel. Keep chilled while you prepare the remaining components.

    Make Honey Syrup (if not prepared)

    If you don’t have honey syrup ready, combine equal parts honey and warm water (for example 1/4 cup honey + 1/4 cup warm water). Stir until fully combined and cool before using. This recipe uses 1 tablespoon.

    Add 2 tablespoons fresh lemon juice and 1 tablespoon honey syrup to the chilled Chardonnay. Stir gently to combine.

Herb & Aromatics

    Lightly bruise one thyme sprig between your palms to release its oils, then add both sprigs to the pitcher. Let the mixture steep in the fridge for 10–15 minutes to infuse a subtle herbal note.

    After infusion, remove and discard one thyme sprig (or leave for garnish, if desired). Express the lemon peel over the pitcher to release the oils, then either drop it in or reserve for individual glasses.

Ice & Optional

    Fill two wine glasses with ice (about 1/2 cup ice per glass). Pour the Chardonnay mixture evenly between the glasses. If you prefer a lighter, slightly spritzed drink, top each glass with about 2 tablespoons (total 1/4 cup) club soda and stir once gently.

    Garnish each glass with the remaining thyme sprig and the expressed lemon peel. Serve immediately while cold.
