Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing the Seafood

Sauté the Seafood
In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the shrimp and scallops. Season with salt and pepper. Cook for about 3-4 minutes, or until shrimp are pink and scallops are opaque. Remove from skillet and set aside.
Making the Sauce

Prepare the Cajun Cream Sauce
In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and stir in the Cajun seasoning and paprika. Bring to a simmer.

Finish the Sauce
Let the sauce simmer for about 5 minutes, stirring occasionally, until it thickens slightly. Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning with salt and pepper to taste.
Combining Everything

Combine Pasta and Seafood
Add the cooked penne pasta and sautéed seafood back into the skillet with the sauce. Toss well to ensure everything is well coated in the sauce. Cook for an additional 2-3 minutes on low heat.
