Select Fresh Oysters
Choose 12 fresh oysters from a reputable seafood market. Look for oysters that are tightly closed; this indicates freshness. If any are open, gently tap them. If they don't close, discard them.

Prepare the Serving Platter
On a large serving platter, place a layer of crushed ice to keep the oysters cold. This will help maintain their freshness while serving.

Shuck the Oysters
Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge of the shell. Twist to open and slide the knife under the oyster to detach it. Be careful to keep the oyster liquor (the natural juice) in the bottom shell.

Arrange the Oysters
Place the shucked oysters on the prepared platter with the deeper shell holding the oyster liquor facing up. Arrange them neatly on the ice.

Serve with Accompaniments
Cut the lemon into wedges and place them on the platter. Pour the mignonette sauce into a small bowl and place it alongside the platter. Put the Tabasco sauce on the side for those who prefer a spicy kick.

Sprinkle a little sea salt over the oysters to enhance their natural flavor. Ensure all accompaniments are ready for serving.
