Method

Cooking the Risotto

    Prepare the Broth

    In a saucepan, heat the vegetable broth over medium heat until it is warm, then reduce the heat to low to keep it warm throughout the cooking process.

    Sauté Aromatics

    In a large pan or skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped onion and sauté for about 5 minutes until they are translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

    Toast the Rice

    Add the Arborio rice to the pan and stir well to coat the grains with the oil and butter. Cook for 2-3 minutes, stirring constantly until the rice is slightly translucent.

    Start Adding Broth

    Begin adding the warm vegetable broth, one ladle at a time, to the rice. Stir continuously until the liquid is almost completely absorbed before adding the next ladle. Repeat this process for about 18-20 minutes, or until the rice is creamy and al dente.

    Incorporate Add-ins

    If using, add the sliced mushrooms and frozen peas about halfway through the cooking process. Continue stirring and adding broth as necessary.

    Finish the Risotto

    Once the rice is cooked to your liking, remove the pan from the heat. Stir in the remaining tablespoon of butter, grated Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.

    Garnish and Serve

    If using, sprinkle freshly chopped herbs over the risotto before serving. Serve immediately in warm bowls.
