Crust Preparation

Prepare the crust
In a medium bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture is evenly moistened.

Form the crust
Press the crumb mixture into the bottom and up the sides of a 9-inch pie pan. Ensure it is packed tightly.

Bake the crust
Preheat your oven to 350°F (175°C). Bake the crust for about 8-10 minutes, or until lightly golden. Remove from oven and let cool.
Filling Preparation

Whisk egg yolks
In a large mixing bowl, whisk the egg yolks until they are pale and slightly thickened.

Incorporate lime juice and zest
Add the key lime juice and lime zest to the mixture. Stir until all ingredients are fully incorporated.

Pour into crust
Pour the filling into the prepared crust and spread evenly.

Bake the pie
Bake in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.

Cool the pie
Remove from oven and allow to cool at room temperature for about 30 minutes. Then refrigerate for at least 2 hours to fully set.

In a mixing bowl, whip the heavy whipping cream and powdered sugar together until soft peaks form.

Spread or pipe the whipped cream over the cooled pie.
