    Peel the carrots and cut off the ends. Slice the carrots into thin strips (julienne) about 1/8 inch thick.

    Cut off the ends of the zucchini. Slice the zucchini into thin strips (julienne) about 1/8 inch thick.

    Remove the stem and seeds from the bell pepper. Slice it into thin strips (julienne) about 1/8 inch thick.

    Cut off the ends of the yellow squash. Slice the squash into thin strips (julienne) about 1/8 inch thick.

    Trim the ends of the green beans by cutting off about 1/4 inch from each end.

    In a large skillet, heat the olive oil over medium heat. Once hot, add the julienned carrots and sauté for about 2 minutes.
