Potatoes

Method

Preparation

  1. 1

    Peel and Cut Potatoes

Begin by peeling the Russet potatoes. Cut them into thin strips, about 1/4 inch thick. Try to keep the size consistent for even cooking.

  2. 2

    Soak Potatoes

Place the cut potatoes in a bowl of cold water. Let them soak for at least 30 minutes. This removes excess starch and helps achieve a crispier fry.

Cooking

  1. 3

    Heat Oil

In a deep fryer or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

  2. 4

    Dry Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

  3. 5

    Fry Potatoes (First Fry)

Carefully add a batch of potatoes to the hot oil. Fry for about 4-5 minutes or until they are pale and soft but not browned. Remove and drain on paper towels.

  4. 6

    Increase Oil Temperature

Increase the oil temperature to 375°F (190°C) for the second fry.

  5. 7

    Fry Potatoes (Second Fry)

Return the fries to the hot oil in batches and fry for an additional 3-4 minutes until golden brown and crispy. Drain on paper towels again.

Seasoning and Serving

  1. 8

    Season Fries

While the fries are still hot, sprinkle with salt, black pepper, garlic powder, and paprika. Toss gently to ensure even coating.

  2. 9

    Serve

Serve the house French fries hot with your favorite dipping sauce.
