Preparing the Grilled Salmon

Marinate the Salmon
In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the salmon fillets to the bowl and coat them well with the marinade. Let them marinate for at least 30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).

Preheat the Oven
While the salmon is marinating, preheat your oven to 400°F (200°C).

Mix Ingredients
In a large bowl, combine the halved baby potatoes, olive oil, lemon juice, garlic powder, dried oregano, salt, and black pepper. Toss until the potatoes are well coated.

Bake the Potatoes
Spread the coated potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through.
Preparing the Brussels Sprouts

Toss the Brussels Sprouts
In a mixing bowl, combine the trimmed and halved Brussels sprouts with olive oil, salt, and black pepper. Toss to coat.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a separate baking sheet and roast in the oven alongside the potatoes for about 20-25 minutes, or until they are crispy and tender, shaking the pan halfway through.
