Method

Preparation

  1. 1

    Clean the Oysters

Rinse the prime oysters under cold water to remove any sand or debris. Pat them dry with a paper towel.

  2. 2

    Prepare the Breading Mixture

In a medium bowl, combine all-purpose flour, cornmeal, salt, and black pepper. Mix well to combine.

  3. 3

    Prepare the Egg Wash

In another bowl, whisk together the eggs and milk until smooth.

Frying

  1. 4

    Heat the Oil

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches approximately 350°F (175°C).

  2. 5

    Bread the Oysters

Dip each oyster first into the egg wash, allowing excess to drip off, then coat with the breading mixture, pressing lightly to adhere.

  3. 6

    Fry the Oysters

Carefully place the breaded oysters into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Serving

  1. 7

    Plate the Oysters

Arrange the fried oysters on a serving platter.

  2. 8

Serve with Cocktail Sauce and Lemon

Serve the oysters with cocktail sauce on the side and a fresh lemon cut into wedges for squeezing over the oysters.
