Fried Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This step is crucial to ensure a crispy texture when frying.

Mix the Dry Ingredients
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to ensure even distribution of spices.

Add the calamari rings to the flour mixture and toss until they are evenly coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by dropping a small amount of flour into the oil; it should sizzle immediately.

Working in batches, carefully add the coated calamari rings to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pan.

In a small mixing bowl, combine mayonnaise, chipotle peppers in adobo sauce, lemon juice, and minced garlic. Mix until smooth and well combined.
