Method
Roast Beef Preparation

Season the Roast
Preheat the oven to 375°F (190°C). Rub the beef roast with olive oil and season generously with salt, black pepper, garlic powder, and onion powder.

Roast the Beef
Place the seasoned roast on a roasting pan and cook in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Baste occasionally with the beef broth.

Rest the Beef
Remove the roast from the oven, cover it loosely with foil, and let it rest for 15-20 minutes before slicing.

Prepare Au Jus
While the beef is resting, pour the drippings from the roasting pan into a saucepan. Add the beef broth and heat over medium heat, bringing it to a simmer. Adjust seasoning to taste if needed.
Horseradish Sauce Preparation

Mix Sauce Ingredients
In a small bowl, combine prepared horseradish, mayonnaise, and Dijon mustard. Mix well until smooth. Adjust horseradish to taste for preferred spice level.
House Fries Preparation

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Heat Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt while still hot.

Slice the Beef
Thinly slice the rested roast beef against the grain.

Serve the sliced roast beef on a platter with a side of au jus for dipping, horseradish sauce for spreading, and house fries.
