Preparing the Chips

Cut the Potatoes
Peel the potatoes and cut them into thick strips, about 1/2 inch wide.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Preheat Oil
In a large pot or deep fryer, heat the vegetable oil to 325°F (165°C).

Increase Temperature
Increase the oil temperature to 375°F (190°C).

Double Fry
Fry the chips again in batches until they are golden brown and crispy, about 3-5 minutes. Remove and season with salt.
Preparing the Fish

Make the Batter
In a bowl, combine the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.

Heat the Oil
In a separate pot, heat the vegetable oil to 350°F (175°C) for frying the fish.

Coat the Fish
Dip each fish fillet into the batter, allowing excess to drip off.

Fry the Fish
Carefully place the battered fish fillets into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes until golden brown and crispy. Remove and let drain on paper towels.

Combine Ingredients
In a bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, and fresh dill.

Season with salt and pepper to taste. Mix well and refrigerate until ready to serve.
