Method

Fish Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

  2. 2

    Make Beer Batter

Gradually add in the O'Brien's lager beer until the batter is smooth and thick.

  3. 3

    Heat Oil

Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).

  4. 4

    Batter the Cod

Dip each cod fillet into the beer batter, allowing excess to drip off.

  5. 5

    Fry the Cod

Carefully place the battered cod fillets into the hot oil. Fry for about 5-7 minutes or until golden brown and cooked through.

  6. 6

    Drain Excess Oil

Remove the fish from the oil and let it drain on paper towels.

Fries Preparation

  1. 7

    Prepare Potatoes

Peel and cut the russet potatoes into thick fries.

  2. 8

    Rinse and Dry

Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with a towel.

  3. 9

    Heat Oil for Fries

In a separate pot, heat vegetable oil to 350°F (175°C).

  4. 10

    Fry the Potatoes

Fry the potatoes in batches for about 4-5 minutes or until they are golden and crispy. Remove and drain on paper towels.

  5. 11

    Season Fries

Immediately sprinkle with salt while still hot.

Slaw Preparation

  1. 12

    Combine Vegetables

In a large mixing bowl, combine the shredded green cabbage and carrots.

  2. 13

    Make Dressing

In another bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

  3. 14

    Dress the Slaw

Pour the dressing over the cabbage and carrots, tossing to coat evenly.

  4. 15

    Chill Slaw

Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Tartar Sauce Preparation

  1. 16

    Mix Tartar Sauce

In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, salt, and black pepper.

  2. 17

    Chill Tartar Sauce

Stir until all ingredients are well combined. Refrigerate until ready to serve.
