Preparation

  1. 1

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and red bell pepper. Sauté for about 5 minutes, or until the vegetables are soft.

  2. 2

    Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cooking the Soup

  1. 3

    Incorporate Tomatoes and Broth

Add the canned diced tomatoes (with their juices) and vegetable broth to the pot. Stir to combine.

  2. 4

    Season the Soup

Sprinkle in the Old Bay seasoning, black pepper, and salt to taste. Stir well to mix the seasonings.

  3. 5

    Simmer

Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 15 minutes.

Final Touches

  1. 6

    Add Crab Meat

Gently fold in the jumbo lump crab meat and let it heat through for another 5 minutes.

  2. 7

    Garnish and Serve

Ladle the soup into bowls, garnish with chopped fresh parsley, and serve with lemon wedges on the side.
