Method

Preparation

  1. 1

    Prepare the Ingredients

If using fresh clams, clean and shuck them. Chop the clams and set aside. Dice the potatoes, chop the onion, and celery. Cook the bacon until crispy, then crumble it.

Cooking

  1. 2

    Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion and celery, and sauté for about 5 minutes until they are softened.

  2. 3

    Add the Potatoes and Flour

Stir in the diced potatoes and continue to cook for another 5 minutes. Sprinkle the flour over the mixture, stirring well to combine.

  3. 4

    Add Broth and Simmer

Gradually add the chicken or vegetable broth to the pot, stirring continuously to avoid lumps. Add the thyme and bay leaf. Bring to a boil, then reduce heat to low and let simmer for 15-20 minutes until the potatoes are tender.

  4. 5

    Finish with Cream and Clams

Stir in the heavy cream and chopped clams. Season with salt and black pepper to taste. Allow the chowder to heat through for another 5 minutes, but do not boil.

Serving

  1. 6

    Garnish and Serve

Remove the bay leaf from the pot. Ladle the chowder into bowls and garnish with fresh parsley and crumbled bacon before serving.
