Chocolate Mousse

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until both chocolate and butter are completely melted and smooth. Remove from heat and let it cool slightly.

    Prepare Egg Mixture

    In a separate bowl, whisk together the large eggs and granulated sugar until the mixture is pale and fluffy. This should take about 5 minutes using an electric mixer.

    Combine Mixtures

    Once the chocolate mixture has cooled slightly, gently fold it into the egg mixture. Add the vanilla extract and mix until fully incorporated.

    Whip the Cream

    In another bowl, whip the heavy cream until stiff peaks form. Be careful not to over-whip the cream.

    Fold in Whipped Cream

    Gently fold the whipped cream into the chocolate mixture in three additions. Be careful not to deflate the whipped cream. The mousse should be light and airy.

    Chill the Mousse

    Spoon the mousse into individual serving dishes or cups and refrigerate for at least 2 hours, or until set.

    Prepare Whipped Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip the mixture until soft peaks form.

    Serve

    Just before serving, dollop the whipped cream on top of each chocolate mousse serving.
