    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes thinly (about 1/8 inch thick) and place them in a bowl of cold water to prevent browning.

    Dry the Potatoes

    After slicing, drain the water and pat the potato slices dry with a clean kitchen towel or paper towels to remove excess moisture.

    Heat the Oil

    In a deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in one potato slice; it should sizzle immediately.

    Fry the Potatoes

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry for about 3-4 minutes, or until they are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and transfer them to a plate lined with paper towels to absorb excess oil. While still hot, sprinkle with salt, paprika, and garlic powder to taste.
