Potato Preparation

    Place the Yukon Gold potatoes in a large pot and cover them with water. Add 1 tablespoon of salt to the water. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly.

    Drizzle with Olive Oil

    After the potatoes have cooled slightly, cut them in half and place them in a serving dish. Drizzle with 2 tablespoons of olive oil and toss gently to coat.
