Prepare the Herb Mixture

In a bowl, combine fresh sage, rosemary, thyme, minced garlic, olive oil, lemon zest, salt, and black pepper. Mix thoroughly to create a paste.

Prepare the Turkey

Place the turkey breast on a clean surface. Carefully loosen the skin on both sides without removing it completely. Rub the herb mixture generously under the skin and all over the turkey breast.

Marinate

Wrap the seasoned turkey breast in plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

Roast the Turkey

Preheat your oven to 180°C (350°F). Place the turkey breast in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 75°C (165°F).

Rest the Turkey

Once cooked, remove from the oven, cover with foil, and let rest for 15-20 minutes before slicing.

Gravy Preparation

Collect Drippings

After removing the turkey, collect the drippings from the roasting pan. Skim off excess fat if necessary.

Make the Roux

In a saucepan over medium heat, add the drippings and heat until bubbling. Sprinkle in the flour and whisk continuously for about 2-3 minutes until it forms a light roux.

Add Broth

Gradually pour in the chicken broth while continuing to whisk. Cook until the gravy thickens, about 5-7 minutes.

Season the Gravy

Add salt and black pepper to taste. Stir well and let simmer for an additional 2 minutes before serving.
