Preparation Steps

Prepare the Noodles
Cook the harusame noodles according to the package instructions. Drain and rinse under cold water. Set aside.

Prepare the Shrimp
In a small pot of boiling water, cook the baby shrimp for about 1-2 minutes until they turn pink. Drain and rinse under cold water. Set aside.

Prepare the Vegetables
In a large bowl, combine the thinly sliced cucumber and julienned carrot.

Make the Dressing
In a small bowl, whisk together rice vinegar, soy sauce, sugar, sesame oil, and salt until the sugar dissolves.

Combine Ingredients
Add the cooked harusame noodles and baby shrimp to the vegetable bowl. Pour the dressing over the mixture and toss gently to combine.

Serve
Transfer to a serving dish and sprinkle with toasted sesame seeds. Serve chilled.
