Prepare Sashimi

Slice the Fish
Using a sharp knife, slice the sashimi-grade tuna and salmon into thin, even pieces, approximately 1/4 inch thick.
Prepare Sushi Rice

Cook the Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

Season the Rice
Once the rice is cooked, transfer it to a bowl and mix in rice vinegar, sugar, and salt while the rice is still warm. Let it cool to room temperature.
Form Nigiri

Shape the Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and shape it into an oval.

Top with Fish
Place a slice of tuna, salmon, or a piece of ebi on top of the shaped rice. Press gently to secure.

Serve
Arrange the nigiri on a platter and serve with wasabi and soy sauce on the side.
