Preparing the Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.
Making the Poke Sauce

Mix the Sauce
In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, and sriracha sauce until well combined. Stir in the chopped green onions.

Build Your Bowl
In a serving bowl, place a generous scoop of the cooked sushi rice. Top with sliced raw salmon, drizzle with poke sauce, and sprinkle with furikake and sesame seeds. Add avocado slices and seaweed salad on the side.
