Make the Batter

In a mixing bowl, combine the all-purpose flour and dashi stock. Whisk until smooth. Add the egg and mix well. Fold in the green onions and shredded cabbage.

Prepare the Seafood

In a separate bowl, combine the shrimp and squid. Add the fish flakes and mix gently.

Cook the Pancake

Heat a non-stick skillet over medium heat. Pour a ladle of the batter onto the skillet and spread it into a round shape. Add a portion of the seafood mixture on top. Cook for about 4-5 minutes until the bottom is golden brown, then flip and cook for an additional 4-5 minutes until cooked through.

Serve

Remove from the skillet and place on a serving plate. Drizzle with okonomiyaki sauce and mayonnaise, and top with shredded nori and pickled ginger. Serve hot.
