Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker, and cook according to the manufacturer's instructions.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar dissolves. Once the rice is cooked, transfer it to a bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Slice the Fish
Using a sharp knife, slice the fresh tuna, salmon, and eel into thin pieces suitable for nigiri. If using shrimp, ensure they are peeled and deveined.
Assemble Nigiri

Shape Sushi Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1 tablespoon) and mold it into an oval shape.

Top with Fish
Place a slice of the prepared fish on top of the shaped rice. For shrimp, place it on top with the curved side facing up.

Serve
Arrange the nigiri on a plate and serve with wasabi, soy sauce, and pickled ginger on the side.
