Method
Marinating the Chicken

In a bowl, combine soy sauce, sake, grated ginger, grated garlic, sugar, and black pepper.

Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
Preparing the Breading

In a separate bowl, mix cornstarch, all-purpose flour, and baking powder together.
Frying the Chicken

In a deep frying pan or wok, heat vegetable oil to 175°C (350°F).
