Prepare the Prawns

Season the Prawns

In a bowl, toss the peeled and deveined prawns with salt and black pepper. Set aside for about 15 minutes.

Make the Batter

Combine the Ingredients

In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, and a pinch of salt.

Add Wet Ingredients

Add the cold water and the egg to the dry ingredients and mix until just combined. The batter should be slightly lumpy.

Prepare the Chili Mayo

Mix the Sauce

In a small bowl, combine mayonnaise, chili paste, lemon juice, and minced garlic. Stir until smooth and set aside.

Fry the Prawns

Heat the Oil

In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Coat and Fry

Dip each seasoned prawn into the batter, allowing excess to drip off. Carefully place the battered prawns in the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve

Plate the Dish

Serve the crispy jumbo ebi with the house chili mayo on the side for dipping.
