Brewing Process

    Mashing

    In a large pot, heat 5 gallons of water to 165°F (74°C). Add the crushed malts and stir well. Maintain the temperature at 150-155°F (65-68°C) for 60 minutes.

    Sparging

    After mashing, sparge with enough hot water to collect 6.5 gallons of wort in your brew kettle.

    Boiling

    Bring the wort to a boil. Add the bittering hops and boil for 60 minutes, adding the aroma hops in the last 5 minutes.

    Cooling

    Cool the wort quickly to around 70°F (21°C) using a wort chiller or ice bath.

    Fermentation

    Transfer the cooled wort to a sanitized fermenter and pitch the ale yeast. Seal and allow fermentation to occur at 68-72°F (20-22°C) for 1-2 weeks.

    Bottling

    Once fermentation is complete, dissolve 3 oz of corn sugar in a small amount of water and add it to the beer. Bottle the beer and cap. Allow to carbonate for 1-2 weeks.
