    Prepare the Spinach

    Bring a pot of water to a boil. Add the fresh spinach and blanch for about 1-2 minutes until wilted. Drain and immediately rinse with cold water to stop the cooking process. Squeeze out excess water and set aside.

    Make the Sesame Dressing

    In a dry skillet, toast the sesame seeds over medium heat until golden and fragrant, about 3-5 minutes. Remove from heat and let cool slightly. Once cooled, grind the sesame seeds in a mortar and pestle or a spice grinder until they are a coarse powder.

    Combine Ingredients

    In a mixing bowl, combine the ground sesame seeds, soy sauce, mirin, sugar, and sesame oil. Mix well to create a smooth dressing.

    Toss the Spinach

    Add the blanched spinach to the bowl with the sesame dressing. Toss gently until the spinach is well coated with the dressing.

    Serve

    Transfer the goma-ae to a serving dish and serve immediately or chilled as a side dish.
