Prepare Filling

Mix the Filling
In a bowl, combine the shrimp, garlic, ginger, soy sauce, sesame oil, green onions, cornstarch, and salt. Mix until well combined and set aside.
Assemble Dumplings

Fill and Fold
Take a wonton wrapper and place a tablespoon of the shrimp filling in the center. Moisten the edges with water and fold the wrapper over to create a pouch. Pinch the edges to seal tightly. Repeat until all wrappers are filled.
Prepare Chili Sauce

Mix Sauce Ingredients
In a small bowl, mix together chili paste, soy sauce, rice vinegar, sugar, minced garlic, and water until well blended. Set aside.
Fry Dumplings

Heat Oil and Fry
In a deep frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the dumplings in batches and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
