Method

Brewing Process

  1. 1

    Mashing

In a large pot, heat 6 liters of water to 65°C (149°F). Add the Pilsner malt and rice flakes, stirring gently. Maintain the temperature for 60 minutes.

  2. 2

    Sparging

After mashing, drain the wort into another pot and rinse the grains with hot water (75°C/167°F) to extract more sugars.

  3. 3

    Boiling

Bring the wort to a boil. Add the Saaz hops and boil for 60 minutes, adding the Hallertau hops in the last 15 minutes.

  4. 4

    Cooling

Cool the wort quickly to 20°C (68°F) using a wort chiller or an ice bath.

  5. 5

    Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal the vessel. Allow to ferment at 10-12°C (50-54°F) for 2 weeks.

  6. 6

    Bottling

After fermentation, siphon the beer into sanitized bottles and cap them. Let them carbonate for another week at room temperature.

  7. 7

    Enjoy

Chill the bottles and serve your homemade Asahi Super Dry Lager cold.
