Prepare Sushi Rice

Rinse and Cook Rice
Rinse sushi rice under cold water until the water runs clear. Combine with water in a rice cooker and cook according to the manufacturer's instructions.

Season Rice
Once cooked, transfer rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold into the warm rice. Allow to cool to room temperature.
Assemble Nigiri

Form Rice Balls
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape using your palms.

Top with Fish
Place a slice of sashimi-grade fish on top of each rice ball. Gently press down to secure.
Aburi Technique

Torch the Nigiri
Using a blowtorch, carefully sear the top of each nigiri until it is slightly charred and the fish is warmed through. Be cautious not to overcook.

Garnish and Serve
Drizzle soy sauce over the top, add a small amount of wasabi, sprinkle lemon zest, and garnish with microgreens or chives. Serve immediately.
