Empanada Preparation

    Make the Dough

    In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add water until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened. Add bell pepper and soyrizo, cooking until heated through. Stir in chopped cilantro and remove from heat.

    Make the Empanadas

    Roll out the dough on a floured surface and cut into circles. Place a spoonful of the soyrizo filling in the center of each circle. Fold the dough over and seal the edges with a fork. Repeat until all dough is used.

    Cook the Empanadas

    Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet and brush with olive oil. Bake for 25-30 minutes or until golden brown.

Guasacaca and Pickled Red Onion Preparation

    Make the Guasacaca Sauce

    In a blender, combine avocado, cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth and set aside.

    Prepare the Pickled Red Onion

    In a bowl, combine sliced red onion, white vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes to pickle.
