Pork Chop

    Prepare the Pork Chop

    Season the tomahawk pork chop with salt, black pepper, garlic powder, and paprika. Rub the olive oil all over the chop.

    Cook the Pork Chop

    Heat a grill or skillet over medium-high heat. Cook the pork chop for about 6-8 minutes per side or until it reaches an internal temperature of 145°F (63°C). Let it rest for 5 minutes before slicing.

Thai Fried Rice

    Scramble the Eggs

    In a large skillet or wok, heat a tablespoon of oil over medium heat. Beat the eggs and scramble them until fully cooked. Remove and set aside.

    Stir-Fry the Vegetables

    In the same skillet, add another tablespoon of oil. Add the diced carrots and cook for 2-3 minutes. Then add the green onions, frozen peas, and cooked rice. Stir-fry for another 5 minutes.

    Combine and Season

    Add the scrambled eggs back to the skillet along with the soy sauce, sesame oil, salt, and pepper. Stir everything together until well combined and heated through.

Japanese Eggplant

    Prepare the Eggplant

    Slice the Japanese eggplants in half lengthwise. Sprinkle with salt and let sit for 10 minutes to draw out moisture.

    Cook the Eggplant

    Rinse the eggplants and pat dry. In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute. Then add the eggplant halves, cut side down, and cook for about 5-7 minutes. Flip and add soy sauce. Cook for another 5 minutes until tender.

    Finish and Serve

    Sprinkle sesame seeds over the cooked eggplant and serve alongside the pork chop and fried rice.
