    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, then rub the salt, black pepper, cumin, and oregano all over the meat. Place in a roasting pan and roast for 2.5 to 3 hours until tender.

    Make the Sour Orange Mojo

    In a bowl, mix together the sour orange juice, minced garlic, and olive oil. Adjust seasoning with salt and pepper to taste.

    Prepare the Nica Slaw

    In a bowl, combine shredded cabbage, red onion, cilantro, and a dressing of your choice (often a vinegar-based dressing). Toss well and set aside.

    Assemble the Sliders

    Once the pork belly is done, let it rest for 15 minutes before slicing into small pieces. Cut the ciabatta rolls in half, layer with the pork belly, a generous spoonful of Nica slaw, and drizzle with the sour orange mojo.

    Serve the sliders warm with extra mojo on the side.
