    Prepare the Mushrooms

    Clean the wild mushrooms and cut them into bite-sized pieces.

    Sauté Onion and Garlic

    In a large pot or skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Cook the Mushrooms

    Add the wild mushrooms to the pot and cook for about 5-7 minutes until they are softened and start to release their juices.

    Toast the Rice

    Add the Arborio rice to the pot and stir to coat with the oil and mushroom mixture. Cook for about 2-3 minutes until the rice is lightly toasted.

    Deglaze with Wine

    Pour in the white wine and cook until it is mostly absorbed by the rice, stirring constantly.

    Add Broth Gradually

    Begin adding the vegetable broth, one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Finish with Cheese

    Once the rice is cooked, remove the pot from heat and stir in the grated Manchego cheese. Season with salt and freshly ground black pepper to taste.

    Serve

    Serve the risotto hot, garnished with chopped fresh parsley.
