Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.

Set Up Breading Station
In one bowl, place the flour mixed with black pepper. In a second bowl, pour in the buttermilk. In a third bowl, combine the cornmeal and salt.

Bread the Tomatoes
Dredge each tomato slice first in the flour, then dip it in the buttermilk, and finally coat it in the cornmeal mixture. Place the breaded slices on a plate.

Heat the Oil
In a large skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tomatoes
Carefully add the breaded tomato slices to the hot oil, frying them in batches to avoid overcrowding. Cook for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Serve the fried green tomatoes warm with Escabeche Mayo, Balsamic Reduction, and Red Pepper Jam on the side.
