Prepare the Beef
Season the beef tenderloin with salt and black pepper. Sear the beef in a hot skillet for 1-2 minutes on each side until charred, then remove and let it cool. Once cooled, wrap in plastic wrap and refrigerate for at least 1 hour.

Make the Dressing
In a bowl, whisk together soy sauce, mirin, rice vinegar, grated ginger, and sesame oil until well combined. Set aside.

Prepare the Sunchokes
Peel and slice the sunchokes thinly. Fry in hot oil until golden and crispy. Drain on paper towels and sprinkle with salt.

Slice and Serve
Once the beef is chilled, slice it thinly against the grain. Arrange on a serving plate, drizzle with ginger soy dressing, and top with crispy sunchokes.
