Sweet Potato - Brown Butter

Prepare the Sweet Potatoes
Peel the sweet potatoes and cut them into 1-inch cubes. Place them in a large pot and cover with water. Add a pinch of salt to the water.

Boil the Sweet Potatoes
Bring the water to a boil over medium-high heat. Once boiling, reduce heat to medium and let them cook for about 15-20 minutes, or until they are fork-tender.

Drain and Mash
Drain the sweet potatoes and return them to the pot. Mash them using a potato masher until smooth and creamy.

Brown the Butter
In a small saucepan, melt the unsalted butter over medium heat. Continue cooking, stirring frequently, until the butter turns a golden brown color and gives off a nutty aroma, about 5-7 minutes.

Combine Ingredients
Pour the brown butter over the mashed sweet potatoes. Add brown sugar, salt, cinnamon, nutmeg, and black pepper. Stir until well combined and the sweet potatoes are creamy.

Garnish and Serve
Transfer the sweet potato mixture to a serving dish and sprinkle chopped parsley on top for garnish. Serve warm.
