Prepare the Pears

Wash and peel the pears. Remove the core and chop them into small pieces.

Make the Pear Mixture

In a blender, combine the chopped pears, Sauternes wine, granulated sugar, lemon juice, and a pinch of salt. Blend until the mixture is smooth and well combined.

Prepare the Syrup

In a small saucepan, combine the water and any remaining granulated sugar. Heat over medium heat until the sugar dissolves completely. Allow to cool slightly before adding to the pear mixture.

Combine and Chill

Pour the cooled syrup into the blended pear mixture and blend again until smooth. Transfer the mixture to an airtight container and place it in the freezer.

Freeze the Sorbet

Let the mixture freeze for at least 4 to 6 hours, or until solid. If the sorbet is too hard, let it sit at room temperature for about 10 minutes before serving.

Serve the Sorbet

Scoop the sorbet into bowls or glasses and serve immediately. Enjoy your refreshing pear Sauternes sorbet!
