    Prepare the Pork

    Preheat your oven to 375°F (190°C). Season the pork tenderloin with salt and black pepper on all sides.

    Sear the Pork

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear for about 3-4 minutes on each side until browned.

    Prepare the Husk Cherries

    While the pork is searing, rinse the husk cherries under cold water and remove the husk. Set aside.

    Make the Pumpkin Sauce

    In a bowl, mix together the pumpkin puree, minced garlic, fresh sage, and honey until well combined. Add salt and pepper to taste.

    Combine and Roast

    Once the pork is browned, pour the pumpkin sauce over it in the skillet. Scatter the husk cherries around the pork. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

    Rest and Serve

    Remove the skillet from the oven and let the pork rest for 5 minutes before slicing. Serve the pork slices topped with the pumpkin mixture and husk cherries.
