Filling

    Soak vermicelli noodles in a bowl of warm water for 5–7 minutes until pliable but not fully soft. Drain and chop into short 1-inch pieces. Set aside.

    Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add diced onion and sauté 2–3 minutes until translucent.

    Add minced garlic and grated ginger to the pan and sauté 30 seconds until fragrant.

    Add chopped mushrooms and cook 3–4 minutes until they release moisture and begin to brown. Push mixture to the side.

    Add shredded taro to the pan and cook 4–5 minutes, stirring occasionally, until softened and lightly golden. (If taro is raw and firm, cook until tender.)

    Stir in shredded carrot and cabbage and cook 2–3 minutes until cabbage wilts but still slightly crisp.

    Add the soaked-and-chopped vermicelli, soy sauce, sesame oil, white pepper, and salt. Stir thoroughly to combine and cook 1–2 minutes to marry flavors.

    Sprinkle cornstarch over the mixture and stir to distribute; this helps bind moisture so the filling isn’t watery. Taste and adjust seasoning.

    Transfer the filling to a bowl and let cool to warm (10–15 minutes). Removing excess moisture prevents soggy wrappers.

Wrappers & Assembly

    Prepare a small bowl of water for sealing wrappers and a clean work surface. If using refrigerated wrappers, separate them carefully.

    Lay one spring roll wrapper on the work surface in a diamond orientation (one point toward you). Place 2–3 tablespoons of the cooled filling slightly below center.

    Fold the bottom corner up over the filling, then fold in the left and right corners snugly toward the center to enclose the filling.

    Brush or dab a little water along the top corner edge, then roll the wrapper up tightly to seal. Repeat with remaining wrappers and filling to make 4 spring rolls (this recipe yields 4 rolls; the menu portion is 2 rolls — see servings below).

    Place assembled rolls seam-side down on a tray and refrigerate for 10 minutes to firm up (optional but helps prevent unwrapping during frying).

Frying

    Pour oil into a heavy-bottomed skillet or pot to a depth of about 1.5–2 inches (approximately 2 cups). Heat oil over medium-high until it reaches 350°F (175°C) or until a small piece of wrapper sizzles and rises immediately.

    Working in batches if needed, gently place 2–3 spring rolls seam-side down into the hot oil. Do not overcrowd.

    Fry for 2.5–4 minutes, turning occasionally, until wrappers are golden brown and crisp. Total time depends on size and oil temperature.

    Use a slotted spoon to remove rolls and drain on a wire rack or paper towels. Let rest 1–2 minutes before serving to avoid burns from hot filling.

Serve

    Cut rolls in half on the diagonal if desired and arrange two rolls per plate (menu portion). Garnish with cilantro and pickled vegetables if using.
